Nestled within the rainforests of Sentosa Island, and set against the panoramic views of the South China Sea, Capella Singapore is one of our favourite spots to escape the city. The hotel’s signature restaurant, The Knolls, is known for tantalising combinations of Western and local flavours. Executive Chef, Ignacio Moreno, has recently reinvigorated the menu, using his extensive travels with his love for experimental food to overhaul the menu and deliver an unparalleled dining experience.
The new and transformed dinner menu is inspired by cuisines from Spain, France, Italy and Greece and has some exceptional highlights. New additions include ‘Roasted Seabass with Citrus Bisque and Burratina’ – roasted eggplant and capers with fresh creamy mozzarella and the Slow Cooked Iberico Pork. To end, try the rich and crunchy ‘Hazlenut and Apricot Gâtaeu’, with Greek yogurt sorbet and mint.
Don’t miss the balanced weekday set lunch menu – try the ‘Quinoa Tabbouleh’ – pomegranate dressing, freshly chopped herb, tomato, onion, puffed crispy buckwheat, which is gluten-free and vegetarian. Classic comforts such as the Capella Club continue to be a part of the lunch menu.
The set lunch menu at The Knolls, available from 12-3pm, is priced at SGD 42 for two courses and SGD 52 for three courses. The dinner menu, curated for family-sharing, consists of three platters – The Mediterranean Mezze Platter at SGD 38, Charcuterie Platter at SGD 42 and the New Zealand Red Snapper for Two at SGD 96.
